Festive Sharers & Snacks: 3 Easy Crowd-Pleasing Recipes with Peter Sidwell
My Crispy Chicken Tenders with Cranberry, Lime and Korean Chilli recipe was born out of one of those classic post-Christmas moments: when you open the fridge and there it is—that half-used jar of cranberry sauce just staring back at you. I thought to myself, surely there’s something better to do with this than another turkey sandwich? And that’s when these crispy chicken tenders came to life.
I actually created this one for my son, Thomas. He’s always been a fan of anything crispy and golden, especially chicken. So, this is my twist on his favourite: light, crunchy chicken tenders coated in sesame, paired with a sticky-spicy dipping sauce that takes that forgotten cranberry sauce and gives it new life. The combination of sharp lime, salty soy, and subtle warmth from Korean gochujang creates something really special. It’s a proper flavour explosion—East meets West with a little festive sparkle.
What I love most about this dish is its simplicity. It’s quick to make, fun to cook with the kids, and makes use of what you’ve already got in the fridge after Christmas. It’s the perfect recipe for that quiet in-between week when everyone’s a little tired of turkey but still wants something comforting and full of flavour.
Alongside the tenders, my crushed potato bravas and homemade humous recipes are just the thing for the festive season. Whether it’s a Boxing Day nibble, a festive games night, or a New Year’s Eve snack, all of these recipes are the kind of food that brings everyone together around the table. No fancy ingredients—just good, honest cooking.
Wishing you a fantastic time enjoying all the festivities.
Merry Christmas and happy cooking!
With love, Peter x
